4 medium sweet potatoes, peeled and sliced into fries
3 tablespoons olive oil
2 tablespoons cornstarch
½ teaspoon fine sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
Method
Prep the Fries: Soak the cut sweet potato fries in ice-cold water for at least 5 hours to remove starch. Drain and pat dry thoroughly.
Coat: Add fries to a large bowl and toss with olive oil and cornstarch until evenly coated.
Bake: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spread fries out evenly in a single layer. Bake for 20 minutes, flip, then bake an additional 10–15 minutes until golden and crispy.
Season: Remove from oven and season with salt, pepper, and garlic powder while hot.
